Iperiber – Spain in Paris

Opened last spring, Iperiber is a nice and delicious Spanish restaurant.

Spain is so close to France yet, it is not so easy to find an authentic Spanish dishes.

This is restaurant opened with passion by Hugues Chapal, after a career in aviation.

In the kitchen, Gloria Fernandez Lago cooks her contemporary vision of traditional Catalan dishes.

To start a tortilla. Simple but very well cooked and tasty. The potatoes are melty but still firm and the tortilla not too greasy.

The main dish is called “rice from the sea”. The rice is cooked with sea bass, codfish and shrimps. 

Is it a paëlla? A risotto ? We don’t care… It tastes very good ! 

 

For lunch the prices are excellent.

A main dish and a drink is 13€ and a full course (starter, main, desert and drink) 19€.

Sushiken – An authentic Japanese

Sushiken, an authentic Japanese sushi restaurant near the Parc des expositions at Porte de Versailles. 

 If you are in a business trip and going everyday to trade shows… You must be really tired of eating industrial sandwiches.

If you can take 1h lunch break, I strongly recommend you to take a japanese fresh lunch or a diner at Sushiken!

Beware there is a lot of fake japanese restaurant and Sushiken is a REAL one ! I insist because this restaurant is a Mr Saito’s family business and they put all their heart in it.

is a former of Orient Extrême, Nobu and Meiji in Paris. 

Chef Saito san and his wife dishes are Japanese classics: sushi, sashimi but also yakitori, teriyaki and tonkatsu…

The products are super fresh, perfectly worked.

The salad is fresh with a japanese sweet and sour dressing. 

A delicious japanese green tea, at will. Deep aromas and this perfect smooth and thickness… 

Not one of those watered colored flavoured water !!!

The miso soup is dense, tasty with nice pieces of tofu. 

The fish and all the ingredients are high quality.

Excellent tastes, textures, and freshness.

The fish is  so fresh and with the perfect size, thickness and cut. 

So lucky ! The chef had received someうに (uni), sea urchin and we had the luck to taste it. It was so fresh and so tasty. 

The great service led by the daughter of Mr Saito is warm and with care.

Joël Robuchon x Sushi Shop

7 creations of Joël Robuchon for Sushi Shop are available from today, January, 15th, 2014, for one year ! 

He explained that his idea was to create something interesting and appealing combinations of flavors and textures with imposed ingredients. His only demand was not to use endangered Bluefin red tuna. His creations are meant to be eaten without soy sauce. The seasoning is in the sushi itself.

It is a minor change from the usual salad.

This tartar has a surprising consistency. It’s is so finely chopped that it nearly taste like a salmon paste.

The five creations are, from left to right: 

1) LOBSTER ROLL CRISPY – 1 piece – 9.90 €

Lobster, banana, cucumber, yuzu mango sauce, soy sheet / Homard, banane, concombre, sauce yuzu mangue, feuille de soja

My favorite. I loved the combination of lobster, banana and yuzu. I don’t like the soy sheet consistency though. 

2) SUSHI ST JACQUES SNACKÉE – 1 piece – 3.50 €

Roasted scallop, saikyo miso sauce / St Jacques snackée, sauce saikyo miso

3) EBI SPICY ROLL – 6 pieces – 7.90 €

Shrimp tempura, spicy tuna, cucumber, chips of vitelotte potato, yuzu sauce kosho / Crevette tempura, thon épicé, concombre, chips vitelotte, sauce yuzu kosho

This one is pretty and has an interesting contrast in texture with the potato chip. 

4) CUT’N ROLL – 6 pieces – 5.90 €

Surimi, avocado, carrot, cucumber, cucumber leaf / Surimi, avocat, carotte, concombre, feuille de concombre

3) HAWAÏAN ROLL – 6 pieces – 7.90 €

Basil shrimp, avocado, salmon, kiwi, mango yuzu sauce / Crevette basilic, avocat, saumon, kiwi, sauce yuzu mangue

The combination is unusual and original. 

Visually the creations are very pretty and I like the idea but I did not feel the taste of every ingredients. The yuzu presence tastes nice but sometime takes on other flavors.

Very tasty and the pecorino spiciness is equilibrate.

A delight ! It is like a light fish stew sauce !

Best of Galette des Rois – Kings Cake – 2014

 If you are lucky to be in Paris this january, here is a selection of my favourite galettes des rois 2014.

1) Jean Paul Hévin – The passionate chocolatier

When a gifted chocolatier creates a Galette des Rois…

The traditional galette des rois pairs with dark chocolate and an almond cream with matcha green tea.

The chunks of chocolate inside makes a nice contrast in textures and enhances the flavour of chocolate.

A perfect equilibrium between the sweetness, the butter, the flavours and the textures. 

I really love the strong chocolate presence and subtle sweetness. 

 

Lucky kings and queens who found the “fève”, make sure of its color. The black version wins a 50g  jar of Prunier caviar !

2) Gontran Cherrier – The most original baker

Gontran Cherrier is a baker. His approach of the galette des rois is technical. He plays on flours and ingredients.

The flaky pastry contains 12% of buckwheat. Buckwheat is gluten-free so it does not rise… A challenge to find to prefect equilibrium. 

I absolutely loved Gontran Cherrier’s pistachio paste filled galette. This year it is hazelnuts cream with subtle orange flavours. No zest nor pieces!

Simply so yummy ! 

 

3) Pierre Hermé – The pastry architect

The most regressive galette des rois with vanilla rice pudding and soft caramel. 

Rice pudding is one of the childhood comfort food for many French.

The association of rice pudding and puff pastry is well made. 

It’s not at all heavy as I would have imagined. And the dough has this nice flakiness.

4) Eric Kayser – A baker-pastry wedding

Each year, Eric Kayser bakes this Southern Kings Brioche. The brioche dough is soft and delicious and is coated with a delicious orange blossom sirup.

Sugar pieces and candied fruits decorate and make a nice texture contrast. 

Each year the cakes improves. This year, the brioche which is technically a bakery seems to get closer to a pastry.

The foie gras is very well cooked with a soft heart. It is full of flavours and texture contrast. A smart creation.
