I find it honorable to fight and to propose alternatives to monopolies such as Nestlé with an ecological approach. The former CEO of Nespresso, Jean-Paul Gaillard, founder of Ethical Coffee Company in 2010 is in commercial and industrial war with Nespresso since its launch (unfair competition, vilification, a system to prevent compatible cartridge use … ). Nestlé is ordered to pay € 500,000 in June 2014 to ECC.

 

 

Ethical Coffee Company, une PME ambitieuse et créative.

Je trouve honorable de combattre et de proposer des alternatives à des monopoles tels que Nestlé avec une démarche écologique.

L’ex-CEO de Nespresso, Jean-Paul Gaillard, fondateur d’Ethical Coffee Company en 2010, est en guerre commerciale et industrielle avec Nespresso depuis son lancement (concurrences déloyales, dénigrements, un système empêchant l’usage de cartouche compatible...). 
Nestlé est condamné à verser 500.000 € à ECC en juin 2014.

 

 

Des capsules biodégradables

Recycler les capsules Nespresso qui produisent 10x de déchets qu’un sachet de café ?  C’est contraignant, sans compter l’empreinte CO2 élevé, de plus de 40 gr par capsule (1 bouteille d’eau = entre 100-200 gr par bouteille) et l’aluminium potentiellement nocive pour la santé.

Les capsules d’Ethical Coffee Company, à base de fibres végétales 100% bio sourcées, se dégradent en 6 mois dans un compost industriel ou 1 ans dans un compost ménager (à tester).

Le café est torréfié par Carasso à Genève et les capsules fabriquées en France.

 

Une gamme de 10 cafés classiques et 7 suprêmes dont un Mandheling d’Indonésie et un de Papouasie.

Recycling Nespresso capsules produing 10 times more waste than a coffee bag?
It is binding, not counting the high CO2 footprint of more than 40 grams per capsule (1 bottle of water = between 100-200 grams per bottle) and the potentially harmful aluminum for health.

The capsules of Ethical Coffee Company, based on plant fibers , degrade in six months in an industrial compost or 1 year in a home compost (to be tested).

The coffee is roasted by Carasso in Geneva and the capsules made in France.

Et le goût ?

Etant une consommatrice de café artisanal, fraîchement moulu, je décide de jouer le jeu des machines en dosette. A mon sens, ils permettent de préparer des cafés facilement, mais sans les complexités aromatiques d’un café en grain de qualité.

Les saveurs de Mandheling et de l’Inca Soave semblent assez proche de la qualité Nespresso et bien supérieurs aux capsules compatibles (juste imbuvable).

A qualité gustative similaire, moins cher avec une démarche éco et équitable. “Quoi d’autre ?”

Nespresso: 0,35€ / classique | 0,39€ / Pure origine.
Ethical Coffee Company: 0,29€ / classique | 0,37€ / Suprême.

 

Les deux cafés biologiques, l’Inca Soave et le Lungo d’Ethical Coffee Company ont été reconnus Saveur de l’Année 2016.

And the taste ?

 Being a consumer of freshly brewed artisan coffee, I decide to play the game of pod machines. 
In my view, they can easily prepare coffee, but without the aromatic complexities of quality coffee beans.

The flavors of the Mandheling and the Inca Soave seem close enough to Nespresso quality and far superior to compatible (just undrinkable) capsules

Similar taste, good quality, cheaper, with eco and fair approach. “What else ?” (It sucks, I know)

Café De Engelbewaarder – Amsterdam

You say to ourself “Oooh it looks cool” … 

Inside it teems with people of all age… Good sign will you tell you… Except that, it is for the Sunday evening jazz concert..

It is a bar!!! A beer bar. 

Not that I have something against beer bars. 

 

 

 

But my food brain is puzzled… Where is the kitchen? 

Too late, I sit in the room at the back, a little skeptical. I like the fact that the menu is fully in dutch.

And all of a sudden a door that I have not noticed opens and a brigade of young chefs happily brings nicely cooked dishes to the adjacent table … Ô joy!

 

The dishes here are simple and intelligently constructed. 

Good fresh products are associated with lovely scented herbs … 

 

Morality: The place does not make the taste.

Lorsqu’on vous parle d’un lieu où les plats sont bons et que vous arrivez devant le Café De Engelbewaarder à Amsterdam …

On se dit “Ohhh ça à l’air cool”…

A l’intérieur c’est noir de monde… Bon signe me direz vous…

Sauf que c’est pour le concert de jazz du dimanche soir et que … c’est un bar !!! Un bar à bière. Pas que j’ai quelque chose contre les bars à bière.

Mais mon cerveau se demande… Mais où sont donc les cuisines ?

Trop tard, je m’installe donc dans la salle du fond un peu dubitative. La carte intégralement en néerlandais. Je like !

Et tout d’un coup une porte que je n’avais pas remarqué s’ouvre et une brigade de jeune chefs apportent joyeusement des plats joliment cuisinés à la table voisine… Ô joie !

Les plats ici sont simples et intelligemment construits. De bons produits frais sont associés à de jolies herbes parfumées…

Moralité : Le lieu ne fait pas le goût.

La Caféothèque – Summer 2013 Iced Specialities

Mon petit péché mignon de cet été est la formule café du jour de La Caféothèque:

Une boule café du jour + boule de glace à 4€, dans un lieu cosy et chaleureux (il y a des ventilateurs partout 🙂 )

A coffee of the day + a scoop of ice for 4€, in a cosy warm place (there are fans all over the place though 🙂 )

Funny the coffee of the day was also Chitul-Tirol of Cobán !

 

You have a different coffee every day which can be matched to an artisanal ice cream flavor (coffee, chocolate, salted butter caramel, lemon … ).

Yeeheee!! Sa many combinations of  tastes to try.

For my part, I could not resist the opportunity to make an affogato.

In Italy, the « affogato al caffé » (literally “drowned in the cafe” in Italian) is served at the end of a meal. It is a scoop of ice cream on which you pay a hot espresso.

It makes 2x(2 in 1): dessert/coffee served and hot/cold.

I love this specialty. Traditionally, I think it is a creamy ice cream vanilla or fiordilatte which is used to contrast with the strong espresso.

But I always opted for the tone-on-tone with the wonderful coffee ice cream. (So Yeeepeee my a…:) )

This is because the recipe of the coffee ice cream was created by La Caféothèque with their Grand Cru Chitul-Tirol of Guatemala (Best coffee 2004 of the Specialty Coffee Association of America).

Some travelling & culture…

The grand cru Chitul-Tirol comes from Cobán. Located in the north of Guatémala, it is a fresh and moist mountainous region. 

Known for its Cloud and Rainforest as well as its lush orchids, the coffee of this  region carries flavors reflecting this environment. A delicate bouquet of chocolate, honey and pepper, which makes it a perfect after meal coffee.

This explains the judicious choice of La Caféothèque for this exclusive creation and why I have it each time. 🙂

Il y a donc chaque jour un café du jour d’un terroir différent qu’on peut associer à un parfum de glace artisanal (café, chocolat, caramel au beurre salé, citron…)

Youhouuu tout un tas de combinaisons de saveurs à tester!!!

Pour ma part, je n’ai pas pu résister à l’envie de faire un affogato.

En Italie, l’affogato al caffé al (littéralement “noyé dans le café” en italien) est servi en fin de repas. Il s’agit d’une boule de crème glacée sur laquelle on verse un expresso chaud.

Ca fait 2x(2 en 1): dessert/café servi et chaud/froid. C’est une spécialité que j’adore. Traditionnellement il me semble qu’il s’agit d’une boule de glace lacté et crémeuse fiordilatte ou vanille qui contraste avec le fort expresso.

Mais j’opte toujours pour le ton sur ton avec la glace au café qui une merveille. (Alors Youhouuu mon oeil..)

Il faut dire que la recette est spécialement conçue par la Caféothèque avec leur grand cru Chitul-Tirol du Guatémala (Meilleur café 2004 de la Specialty Coffee Association of America)

Un peu de voyage & de culture…

Le grand cru Chitul-Tirol vient de la région Cobán. Située au nord du Guatémala, c’est une région montagneuse, fraîche et humide.

Connue pour ses Rainforests, ses Cloud Forests (forêts de nuage), son climat brumeux et ses orchidées luxuriantes, le café de la région porte des saveurs reflétant son environnement.

Bouquet délicat, chocolaté, miel et poivré, il est parfait pour un fin de repas. Ce qui explique le choix judicieux de la Caféothèque pour cette création exclusive et pourquoi je la déguste à chaque fois. 🙂
