After an international culinary journey (Japan, Spain, Belgium France), Atsushi Tanaka opened his restaurant, early April.

 You can feel voyage and freedom in the creations of Atsushi Tanaka.

Called “the Picasso of the kitchen” by Pierre Gagnaire, this is my lunch at A.T., a very promising young chef.

A  a contemporary art version of the Japanese cracker “osembe”.

Excellent ! Perfect cook for the cockles and the vegetables.

The presentation is very pretty. The veal is soft, tasty and the rutabaga solid purée was delicious.

2.  Horse-mackerel (Trachurus), cucumber, lovage, yoghurt powder

The raw mackerel is melty, the cucumber fresh and there are such subtle aromas. I loved the delicate yogurt powder.

3. Hake, declination of root celery (puree, pickles balls), hay emulsion

Oh ! So much work in one dish… Contrast of textures and flavours. The hay emulsion was silky, light and we finished it until the last drop.

I like when the fat comes with the meat ! The porc was tasty and melty !!! Perfectly cooked.

An amazing, audacious combination of favours. The Timut pepper infused cream is just divine… 

Yes it is a roll of beetroot ribbon ! Crazy no ? 

YES it is Art… This dish can be an allegory to an awaking volcano !

I tasted “Vie” 2012 and 2013 and there where so totally different. 

I am not so fond of white wines usually… But this one was amazing. Solar but still full of freshness. Look at these orange reflections !!!

Je ne suis pas si friande de vins blancs en général … Mais celui-ci avec ses reflets orangés était incroyable. Solaire, mais pleine de fraîcheur.

The work of Pierre Nicolas goes beyond a simple organic label. His involvement in biodynamic wines is profound.

He says “I try to use the simplest treatment as possible. With decoctions and infusions of plants growing around the grapevine”.

A funky mix of Parisian tea salon and of more recent, trendy crafty spirit… A very international tea room.

Tea 5€, cottage cheese with marble syrup 4.50€, cookie 2,70€

We took the “Thé des Moines” of Le Palais des Thés, the Monk Tea. 

A traditional Tibetan black and green tea mix, with 10 plants and flowers. A nice jasmine and bergamot sent.

 

We also tried the “Thé des Korrigans” of La Maison Donovan.

Korrigans is a legend creature from Brittany. A black tea with salted butter caramel flavour (of course 😉

It had a very strong flavour. 

 

The home-made chocolate and peanut butter cookie was delicious.

Knitting

I used to come to this tea salon when it opened few years ago…

Since then, it transformed into a knitting tea room ! I don’t knit (yet). Yet, I enjoyed the company of the yarn rainbows…

The yarns are hand dyed yarns from North America and UK.

As you can see they have a wide and coloured selection of yarns as well as teas.
From green tea, to black or white tea, half-fermented or fermented tea.
 
 
Butte-aux-Cailles-Pierre-Caille
L’OisiveThé is located at la Butte-aux-Cailles, an area the 13th arrondissement of Paris.
 
“Butte-aux-Cailles” means mound of quails.
In my imagination, the origin of the name would have been a hill with quails flying around…
 
The truth is much more mercenary… 
Pierre Caille, bought the area in 1543 and named it ! 
 
 
They have lunch service and brunches on week-ends. 

A very international tea room spirit.

Shabu Shabu is the name of a Japanese dish. The original dish is the Chinese hot pot (shuan yang roy). 
 Shabu Shabu is an onomatopoeia evocating the sound of the ingredients stirring in the cooking pot.

Bad side of the price: all you can eat menu, the quantity of the ingredients.
Some ingredients were turning for a long time and seemed a bit tired (rare though).

It is made with a paste of almond and candied fruit (apricots, melons, oranges…), matzo and topped with a sugar icing.

Of course, Le Petit Duc have different flavours of calissons: Damask Rose, pistachio, orange…

Nougat, a confectionary usually composed of sugar, honey, roasted nuts, whipped egg whites.

My best chocolate cake recipe – Gluten Free

On this 1st of May (Labour Day in France), I wanted to share with you, my best chocolate cake recipe, so far… 

The classic and simple chocolate cake (Le gâteau au chocolat) is one of my best friends.

Inspiring, relaxing to make, it can be filled with love and friendship… and can even heal broken hearts ! 😉

My best chocolate cake

My best chocolate cake recipe so far. 5 ingredients, 2 bowls, easy, tasty, soft, with a contrast of truffle texture and crispy crust… A must try !

Prep Time 15m
Cook Time 35m

Ingredients

✫ 4 eggs / 4 oeufs
✫ 8.8 ounces 60-70 cacao % Dark chocolate / 250g de chocolat noir à 60-70 % cacao
✫ 2 sticks butter / 220g beurre
✫ 3/4 cup sugar / 150g sucre
✫ 1/2 cup flour / 80g farine

✫ ✫ ✫ ✫ ✫ ✫ ✫ ✫ ✫ ✫ ✫ ✫ ✫

 

1) Melt the chocolate and the butter over a bain-marie, in  a heatproof bowl 
2) Mix the eggs and the sugar until it lightens and gets airy.
3) Pour the chocolate mix in the egg mix
4) Add the flour
5) 30-40 minutes in preheated oven at 355°C.

 

 

 

VERSION FRANCAISE

✫ 4 oeufs
✫ 250g de chocolat noir à 60-70 % de cacao
✫ 220g beurre
✫ 150g sucre
✫ 80g farine

1) Faire fondre le chocolat et le beurre au bain-marie.
2) Mélanger les oeufs et le sucre jusqu’à ce qu’ils blanchissent et montent en volume.
3) Verser le mélange de chocolat dans le mélange d’oeufs.
4) Ajouter la farine.
5) 30 à 40 minutes dans un four préchauffé à 180°C.

Utiliser un bol thermo-resistant pour le bain-marie !
